H. Hillmann married Heinrich von Thun's daughter Gesche Catherine von Thun (born 1844), and they set up home at 35 Gloucester Street, Stepney.

In the 1870s, assisted by money saved by his father-in-law, Gerd Hillmann was finally able to move on from his work as a sugar baker, and became licensee of the "Duke of Gloucester" pub at 81 New Road, Whitechapel, which he managed until his death in 1884. He first had to become a naturalised British citizen, which he achieved on 15 April 1878. After his death, his widow, Gesche, took over the licence and continued to run the pub for a few years with their eldest son Johann Hermann until he died in 1900, when she gave up the licence and retired.
